Nettle is also called ‘Stinging Nettle’ because it stings.. well fancy that. After collecting with your gloves on it is pretty simple to loose the sting by blanching the leaves in some hot water or by cooking. A wonderfully nutritious food nettle is a great addition to your weekly menu. It has a spinach like taste and is easy to enjoy. I made this Nettle Soup recently and passed it by some of my judgement panel. eek! Check out our video to see it all unfold 🙂

 

 

Ingrediants

olive oil for pan

1 small onion

1 stick of celery

2 galic cloves

1 medium potato chopped into cubes

1 litre of veggie stock or 2 teaspoons of homemade veggie paste

2 big handfuls of nettle (Use gloves)

1/2 a lemon

 

1. In a little olive oil cook onions and celery till soft

2. Add garlic and cook a few minutes longer

3. Cover lower heat and allow to sweat for 5mins

4. Add potato and veggie stock

5. Cook for 10 mins until potato is soft

6. Add to genourous handfuls of fresh nettle

7. Cook for a few more minutes stirring occasionaly

8. Blend up with hand blender

9. Season to taste and squeeze in half a lemon

 

So simply, So nourishing, So delicious
